Cardamom Citrus Salad
Cardamom Citrus Salad
1 ea large pink grapefruit
3 ea navel oranges
1/4 cup honey
2 tsp. lemon juice
1/4 tsp. cardamom
Prep time: 15 minutes
Cook time: 10 minutes
Marinate time: 15 minutes

With a sharp knife, cut the peel off the fruit. Cut the fruit away from the membranes, letting the fruit and any juices fall into a bowl; drain all of the juices into a small saucepan. Add honey, lemon juice and cardamom to the saucepan and bring to a boil. Cook over low heat for 10 minutes, then let cool. Carefully stir honey mixture into fruit and let stand for 15 minutes.

Makes 4 servings.
