Tropical Coconut Lime Squares

Tropical Coconut Lime Squares
2 cups flour
1/2 cup butter
1/2 cup macadamia nuts
1/4 cup brown sugar

2 eggs
1 cup toasted coconut
2/3 cup brown sugar
1/3 cup lime juice
2 tbsp. flour
2 tsp. lime zest
1 tsp. baking powder
Prep time: 20 minutes, Cook time: 30 minutes

Preheat oven to 350°F and spray a 9-inch square baking pan with nonstick cooking spray. Stir together flour, butter, macadamia nuts and brown sugar in a medium bowl with a fork until ingredients stick together; press firmly into the bottom of prepared pan and set aside. Meanwhile, beat eggs until frothy, then stir in remaining filling ingredients. Pour over crust and bake for 30 minutes. Let cool completely before cutting into squares.

Makes 16 squares.

Tip! To toast coconut, place in a dry skillet and cook over low heat, stirring, until golden brown.
