Orange and Shrimp Salad with Ginger Lemon Dressing
Orange and Shrimp Salad with Ginger Lemon Dressing
Ingredients
1 (7- oz.) bag Ready Pac European-Style Parisian Salad
2 oranges peel cut away and fruit diced
1 lb. cooked shrimp
1/3 cup red onion slivered
3 tbsp. fresh lemon juice
3 tbsp. extra virgin olive oil
1 tbsp. honey
1 tsp. crystallized ginger finely chopped
1/4 tsp. salt
freshly ground pepper to taste
Directions
Prep time: 10 minutes, Chill time: 10 minutes

Place all salad ingredients in a medium bowl. Drizzle dressing over salad; toss lightly.

Makes 4 to 6 servings.

Ginger Lemon Dressing: In a small bowl, whisk together 3 tbsp. fresh lemon juice, 3 tbsp. extra virgin olive oil, 1 tbsp. honey, 1 tsp. finely chopped crystallized ginger, 1/4 tsp. salt and freshly ground pepper to taste.
