Savory Egg Cups

Savory Egg Cups
2 frozen puff pastry shells
1 tbsp. butter
4 eggs beaten
1/3 cup Brie cheese diced
2 tbsp. tomato chopped
1 tbsp. fresh tarragon OR snipped
1 tbsp. fresh chervil OR snipped
1 tbsp. fresh chives snipped
Freshly ground sea salt and pepper to taste
Prep time: 20 minutes, Cook time: 20 minutes

Preheat oven to 400°F and place frozen puff pastry shells on a baking sheet. Cook for 20 minutes or until golden brown. Remove center piece to form a shell. Just before pastry is done, melt butter in a small skillet. Add eggs and cook, stirring frequently, until eggs are just set. (Do not overcook.) Stir in cheese, tomato and tarragon; season to taste with salt and pepper.

Makes 2 servings.

Serving tip! Serve with a hug, a kiss and the words, “Pour toi, mon amour!” This means, “For you, my love!” (Remember: French is not only the language of love, but it’s always worth extra credit.)
