Chocolate Espresso Waffles with Mocha Cream

Chocolate Espresso Waffles with Mocha Cream
2 (1- oz.) squares semi-sweet chocolate
1 tbsp. Medaglia D'Oro Instant Espresso Coffee (in the coffee section)
1¾ cups flour
1/2 cup sugar
1 tbsp. baking powder
1/4 tsp. salt
1¼ cups Land O' Lakes Fat Free Half & Half
3 eggs

Prep: 10 minutes, Cook: 20 minutes, Makes: 8 waffles

1. Melt butter and chocolate together in the microwave. Stir in espresso and set aside to cool. In a large bowl, stir together flour, sugar, baking powder and salt with a whisk.

2. In a small bowl, stir together half & half and eggs; whisk in cooled chocolate mixture. Combine wet and dry ingredients, mixing just until all of the flour is incorporated. Bake in a preheated waffle maker according to manufacturer's directions.

Mocha Cream: Beat together until stiff 1 cup heavy whipping cream, 2 tbsp. powdered sugar, 1 (1-oz.) square melted and slightly cooled semi-sweet chocolate and 1 tsp. instant espresso. Top waffles with whipped cream and chopped coffee beans, if you like.
