Kid-Style Stuffed Potatoes

Kid-Style Stuffed Potatoes
1 Start with medium russet potato
1/2 tbsp. butter
1 tbsp light sour cream
Salt and pepper to taste
Additional toppers: Steamed veggies (such as broccoli florets, zucchini, spinach, corn, bell pepper or carrots), bacon bits, chopped turkey ham, shredded Cheddar cheese, snipped green onion tops
Prep time: 10 minutes Cook time: 10 minutes

1. Wash the potato and pierce with a fork in a few places. Microwave on high for 7 to 10 minutes or until soft when gently squeezed.

2. Let cool for a few minutes, then cut open and fluff the potato with a fork.

3. Stir in butter, sour cream, salt and pepper.

4. Add any other toppers you like.

Makes 1 serving.
