Chase's Spinach and Basil Eggs
Chase's Spinach and Basil Eggs
2 eggs
1/2 tbsp. cold water
Seasoned salt and pepper to taste
1 small handful fresh spinach (about 1/2 cup)
1 small handful fresh basil leaves (about 1/2 cup)
1 tsp. olive oil
Optional ingredients: hot sauce or salsa, shredded cheese, chopped sausage or ham slices sourdough bread, toasted
Prep time: 10 min., Cook time: 7 to 10 min.

Break eggs into a small bowl and beat well with a
fork. Stir in water, salt and pepper. Chop spinach
and basil into 1/2-inch pieces. Heat oil in a small
skillet over medium-low heat. Add spinach and basil
and cook for 2 minutes. Pour eggs into skillet and
let cook for about 5 minutes, stirring and lifting the
edges so the uncooked egg can slide underneath.
(If you want to add any of the optional ingredients,
do so when the eggs are halfway cooked.) When
the eggs are completely cooked, fold them to fit the
bread. Slide the eggs onto one slice of toast and
top with the second slice. Enjoy!

Makes 1 serving.
