Oven Fried Chicken
1 whole cut-up frying chicken
2 cups buttermilk
1 cup plain dry breadcrumbs
1/4 cup Parmesan cheese finely grated
1 tbsp. each: thyme, seasoned salt, garlic powder and paprika
1/2 tsp. pepper
3 tbsp. butter melted
Prep time: 20 minutes
Marinate time: several hours
Cook time: 1 hour

Place chicken and buttermilk in a large resealable plastic bag and seal well; refrigerate for several hours. Preheat oven to 350°F and spray a large, shallow baking dish with nonstick cooking spray. Stir together breadcrumbs, cheese and seasonings in a medium bowl. Remove chicken from buttermilk and roll in crumb mixture, pressing the crumbs firmly onto the chicken. Pour melted butter into prepared pan and place chicken in pan, skin side down. Cook for 30 minutes. Carefully turn and cook for 30 minutes more.
