Barbecue Beef Sandwiches

Barbecue Beef Sandwiches
3 1/2 lb. Raley's Beef Chuck Roast California raised USDA choice boneless
1 medium onion peeled and chopped
1 cup ketchup
1/3 cup Pickapeppa Sauce (in the condiments section)
1/3 cup brown sugar
2 tbsp. spicy brown mustard
1/2 tsp. pepper
8 onion rolls (or other small round rolls)
Prep time: 15 minutes Cook time: 5 to 6 hours Makes: 8

1. Trim beef to remove large pieces of fat; cut into cubes.
2. Place in a large slow cooker with onion.
3. Whisk together remaining ingredients except rolls and
pour over meat. Cover and cook on high for 5 to 6 hours or
until meat shreds easily.
4. Remove from cooker with a slotted spoon and shred
with a potato masher or 2 forks. Return to cooker and stir

Beer Pairing: Newcastle Brown Ale
The sweet and tangy sauce needs a beer hearty enough, but
with a bit of sweetness, like this English classic.
