Sweet-Tart Cherry Cobbler
Sweet-Tart Cherry Cobbler
Ingredients
2 (14.5- oz.) cans red tart pie cherries pitted
1 cup sugar
3 tbsp. cornstarch
1/2 tsp. almond extract
Topping:
1-1/2 cups flour
1/2 cup sugar
2-1/2 tsp. baking powder
1/4 cup butter softened
1/3 cup milk
1 egg
1/2 of a 7- oz. tube Odense Pure Almond Paste crumbled
Directions
Prep time: 15 minutes
Cook time: 20 to 25 minutes

Preheat oven to 400°F and spray a 2-quart
casserole dish with nonstick cooking spray. Drain
cherries, reserving 1/2 cup juice. Stir together juice,
cherries, sugar, cornstarch and extract in a medium
saucepan. Cook over medium heat for 5 minutes or
until thickened; spread in prepared pan. For
topping, mix flour, sugar, baking powder and butter
with a fork until butter is in very small pieces; stir in
milk, egg and almond paste. Drop by
tablespoonfuls over cherry mixture and bake for 20
to 25 minutes or until topping is golden brown and
cooked through. Serve with small scoops of vanilla
bean ice cream, if you like.

Makes 8 servings.
