Italian Vegetable Grain Stew

Italian Vegetable Grain Stew
1 (20- oz.) package Italian turkey sausage
2 cups onion chopped
1 cup celery chopped
1 cup carrots chopped
1 cup turnips chopped
1 cup parsnips chopped
1/4 cup pesto
2 (32- oz.) containers chicken broth
1 (14½- oz.) can fire-roasted diced tomatoes
1 (8.8- oz.) package Raley's Basmati Rice, Oats and Lentils (near the rice and pasta)
4 cups kale pieces, baby spinach or Swiss chard 1-inch pieces

Prep: 20 minutes Cook: 30 minutes Serves: 8 to 10

Remove casings from 1 (20-oz.) package Italian turkey sausage and break into
1/2-inch pieces into a large pot. Add 2 cups chopped onion, 1 cup each: chopped celery, carrots, turnips and parsnips, 1/4 cup pesto, 2 (32-oz.) containers chicken broth, 1 (14½-oz.) can fire-roasted diced tomatoes and
1 (8.8-oz.) package Raley’s Basmati Rice, Oats and Lentils (near the rice and pasta). Bring to a boil; reduce heat and simmer, covered, for 30 minutes. Stir in
4 cups 1-inch kale pieces, baby spinach or Swiss chard, if you like. Serve with additional pesto and grated Parmesan cheese.
