Cherry Wheat Berry  Herb Salad
Cherry Wheat Berry Herb Salad
Ingredients
2 cups water
1 cup Jovial Einkorn Wheat Berries
1 cup fresh cherries pitted and halved*
1/2 cup celery thinly sliced
1/2 cup walnuts coarsely chopped, toasted
2 tbsp. fresh oregano chopped
2 tbsp. fresh basil chopped
3 tbsp. extra virgin olive oil
2 tbsp. white balsamic vinegar
1/2 tsp. salt
Freshly ground pepper to taste
Directions

Prep: 20 minutes Cook: 30 minutes
Chill: several hours Serves: 6

1. Bring water and wheat berries to a boil in a medium saucepan. Reduce heat and simmer, covered, for 30 minutes. Fluff with a fork and let cool.
2. Add cherries, celery, walnuts and herbs to salad and stir lightly.
3. Whisk together all dressing ingredients in a small bowl and pour over salad and stir in lightly. Cover and chill for several hours

*May substitute 1/2 cup dried cherries.
