Agave Lime Arugula  Chicken Salad

Agave Lime Arugula Chicken Salad
1/4 extra virgin olive oil
3 tbsp. lime juice
1 tbsp. agave nectar
1 tsp. garlic salt
the zest of 1/2 lime
2 cups chicken coarsely shredded, grilled
1/2 red onion quartered and thinly sliced
1 (5- oz.) bag baby arugula
1/4 cup pumpkin seeds roasted, salted

Prep: 15 minutes Serves: 4

Whisk together 1/4 cup extra virgin olive oil, 3 tbsp. lime juice, 1 tbsp. agave nectar, 1 tsp. garlic salt and the zest of 1/2 lime in a large bowl. Stir in 2 cups coarsely shredded, grilled chicken and 1/2 cup quartered and thinly sliced red onion. Add 1 (5-oz.) bag baby arugula and 1/4 cup roasted, salted pumpkin seeds and toss to coat.
