Soyrizo Potato Tacos

Soyrizo Potato Tacos
Ingredients
1 lb. potatoes cut into 1/2-inch cubes
3/4 cup Soyrizo Meatless Chorizo
1/2 cup pico de gallo or salsa
1/2 cup Jack cheese shredded
Directions

Prep: 10 minutes Cook: 10 minutes Serves: 4

Cut 1 lb. potatoes into 1/2-inch cubes; cover and
microwave in a medium bowl for 8 minutes on HIGH or until tender. Transfer to a large skillet with 3/4 cup Soyrizo Meatless Chorizo, 1/2 cup pico de gallo or salsa and 1/2 cup shredded Jack cheese. Cook over medium-high heat for 5 minutes, stirring frequently. Spoon into warm tortillas and top with fresh cilantro.
