Sweet & Spicy Edamame  Quinoa Salad
Sweet & Spicy Edamame Quinoa Salad
Ingredients
1¹⁄³ cup water
1 cup quinoa rinsed in a fine mesh sieve
1/2 cup Organicville Miso Ginger Dressing
1/2 cup shelled edamame
1/2 cup red bell pepper 1/4-inch diced
2 tbsp. fresh cilantro chopped
2 tbsp. Grama's Sweet Chilli Sauce
1 tbsp. soy sauce
1/2 cup almonds slivered, toasted
Directions

Prep: 20 minutes Cook/Stand: 22 minutes
Chill: several hours Serves: 6

1. Bring water to a boil in a medium saucepan. Stir in quinoa and simmer, covered, for 10 minutes. Remove from heat and let stand for 12 minutes, then fluff with a fork and let cool.
2. Place in large bowl and stir in remaining ingredients except almonds. Cover and chill for several hours.
3. Top with almonds just before serving.
