Cheddar Cornmeal Pancakes  with Pico de Gallo and Eggs
Cheddar Cornmeal Pancakes with Pico de Gallo and Eggs
Ingredients
1 cup Kodiak Complete Pancake Mix
1½ cups milk
1/2 cup cornmeal
1/2 cup shredded sharp Cheddar cheese
1 tsp. Morton & Bassett Mexican Blend Seasoning
1 egg (uncooked)
butter for skillet
4 fried eggs
1/2 cup Raley's Fresh Pico de Gallo (in our Produce Dept.)
4 tsp. light sour cream
Directions

Prep: 15 minutes, Cook: 15 minutes, Serves: 4

1. Stir together pancake mix, milk, cornmeal, cheese, seasoning and egg in a medium bowl.

2. For each pancake spoon 1/4 cup batter into a lightly buttered skillet. Cook for a few minutes on each side or until lightly browned.

3. Top each serving with a fried egg, pico de gallo and sour cream.
