Spicy Szechwan Chicken  and Broccoli
Spicy Szechwan Chicken and Broccoli
1 tbsp. canola oil
1 lb. boneless, skinless chicken breasts cut into bite-size cubes
1 cup onion chopped
1/3 cup Blue Diamond Unsweetened Coconut Almond Breeze
1½ tsp. fresh ginger grated
1½ tsp. chili garlic sauce
1½ tsp. Urban Accents Ginger Szechwan Seasoned Salt
2 cups small broccoli florets
2 cups pieces asparagus or quartered mushrooms (or a mixture of all)

Prep: 15 minutes Cook: 15 minutes Serves: 4

1. Heat oil in a large skillet over medium-high heat. Add chicken and onion and stir-fry for 10 minutes or until chicken is golden brown.
2. Stir in Almond Breeze, ginger, chili garlic sauce and Szechwan salt; cook for a few minutes more. Stir in broccoli and stir-fry until crisp-tender.
