Smoky Mock Lasagna
Smoky Mock Lasagna
2 cups Lundberg Organic Brown Rice Penne Pasta
1 cup gluten-free pasta sauce (such as Organicville)
1/2 cup part-skim ricotta cheese
1/4 tsp. dried basil leaves
1/2 cup shredded Rumiano Smoked Mozzarella Cheese (in our Deli)

Prep: 15 minutes Cook: 11 to 12 minutes Serves: 4

1. Cook pasta in boiling salted water for 7 minutes; drain well.
2. Place 1 tbsp. sauce in 4 (2 cup) microwave-safe ramekins. Top with 1/3 of the pasta.
3. Stir together ricotta and basil, and spread half the mixture over pasta in each dish. Top with half the mozzarella and repeat pasta, ricotta and mozzarella layers, ending with a last layer of pasta.
4. Spread remaining sauce over top and sprinkle with Parmesan. Cover and microwave on HIGH for 4 to 5 minutes. Serve with additional pasta sauce, if you like.
