Peanut Panko Tofu

Peanut Panko Tofu
1/4 cup thick teriyaki sauce
1 (12- oz.) container extra firm tofu (in our Produce Dept.)
1/4 cup panko bread crumbs
1/4 very finely chopped roasted, salted peanuts
1/4 tsp. ground ginger
1/4 tsp. garlic powder
olive oil cooking spray

Prep: 15 minutes, Marinate: 30 minutes, Cook: 30 minutes, Serves: 2

1. Place teriyaki sauce on a small plate. Drain tofu and pat dry with paper towels; cut into 4 pieces. Place in sauce and let marinate for 30 minutes, carefully turning once.

2. Place breadcrumbs, peanuts, ground ginger and garlic powder on a plate; mix well. Roll each tofu piece in mixture, pressing firmly into the surface.

3. Place on a foil-lined baking sheet and coat liberally with olive oil cooking spray. Bake at 425°F for 30 minutes, coating with cooking spray several times.
