Peanut Panko Tofu

Peanut Panko Tofu
Ingredients
1/4 cup thick teriyaki sauce
1 (12- oz.) container extra firm tofu (in our Produce Dept.)
1/4 cup panko bread crumbs
1/4 roasted, salted peanuts very finely chopped
1/4 tsp. ground ginger
1/4 tsp. garlic powder
olive oil cooking spray
Full Circle Organic Peanut Satay or Ginger Teriyaki Sauce (optional)
Directions

Prep: 15 minutes Marinate: 30 minutes
Cook: 30 minutes Serves: 2

Place 1/4 cup thick teriyaki sauce on a small plate. Drain 1 (12-oz.) container extra firm tofu (in our Produce Dept.) and pat dry with paper towels; cut into 4 pieces. Place in sauce and let marinate for 30 minutes, carefully turning once. Place 1/4 cup each: panko bread crumbs and very finely chopped roasted, salted peanuts and
1/4 tsp. each: ground ginger and garlic powder on a plate; mix well. Roll each tofu piece in mixture, pressing firmly into the surface. Place on a foil-lined baking sheet and coat liberally with olive oil cooking spray. Bake at 425°F for 30 minutes, coating with cooking spray several times. Serve with Full Circle Organic Peanut Satay or Ginger Teriyaki Sauce.
