Ingredients
1 Large eggplant
2 (1/2 -inch thick) slices red onion
1/4 cup tahini sauce
1/4 cup lemon juice
2 tsp. smoked paprika
1 tsp. cumin
3/4 tsp. salt
Chopped fresh parsley (optional)
Directions

Serve as an appetizer with warm naan bread or use as a sandwich spread in place of mayo.

Prep: 20 minutes, Cook: about 20 minutes

1. Grill eggplant over medium heat for 15 to 20 minutes, turning occasionally, or until skin is charred and blistered and eggplant feels soft when gently squeezed. Grill onion for a few minutes on each side or until softened.

2. Remove skin from eggplant and place in a food processor with onion and remaining ingredients except parsley. Add parsley and pulse on and off to finely chop.
