Grilled Caesar Salad with Sweet Smoky
Grilled Caesar Salad with Sweet Smoky Dressing
1/3 cup Caesar salad dressing
1/4 cup cilantro leaves
1 tbsp. lime juice
1 tbsp. agave nectar
1/2 small chipotle pepper and 1 tsp. adobo sauce from can
1 (22- oz.) package romaine hearts halved horizontally
1 head radicchio sliced 1/2-inch thick
1/4 cup roasted, salted pumpkin seeds (in our Natural Foods bulk bin #630)

Prep: 10 minutes Cook: 2 to 3 minutes Serves: 4

1. Puree dressing, cilantro, lime juice, agave, chipotles and adobo sauce in a small food processor.
2. Grill romaine and radicchio on a well-oiled grill over medium-high heat for 2 minutes or until nicely charred. Remove and coarsely chop.
3. Place in a large bowl and toss with dressing. Sprinkle with pumpkin seeds and serve immediately.
