Grilled Avocado Jalapeño Corn
5 ears fresh corn
2 tomatillos, peeled and rinsed
1 jalapeno
1 avocado, halved and pitted
1/4 cup fresh cilantro leaves
1 tsp. lime juice
1/4 tsp. salt
1 clove garlic

Great as a salad or serve with good quality tortilla chips for dipping.

1. Shuck corn. Grill over medium heat with tomatillos, jalapeño and avocado for 5 to 10 minutes or until lightly charred, turning occasionally.

2. Remove stem and seeds from pepper and scoop avocado from peel. Place in a small food processor with tomatillos, cilantro, lime juice, salt and garlic; puree until smooth.

3. Cut corn from cob and stir in avocado mixture. Best served within 2 to 3 hours.
