Grilled Chicken and  Plum Skewers with  Sriracha Plum Glaze

Grilled Chicken and Plum Skewers with Sriracha Plum Glaze
Ingredients
1/2 cup plum sauce (on the Asian Foods aisle)
1/4 cup rice vinegar (unseasoned)
4 to 6 tsp. Sriracha Hot Sauce (on our Asian Foods aisle)
1/2 tsp. ground ginger
2 Large firm but ripe plums
1 lb. Raley's boneless, skinless chicken breasts, cut into thin flat strips
4 long bamboo skewers, soaked in water to avoid burning
4 short bamboo skewers, soaked in water to avoid burning
Thinly sliced fresh cilantro (optional)
Directions

Great over rice or an Asian noodle salad.
Prep: 30 minutes, Cook: 15 minutes, Serves: 4

1. Stir together plum sauce, vinegar, Sriracha and ginger in a small saucepan and bring to a boil; reduce heat and simmer for 5 minutes. Place half the sauce in a smaller bowl. Cut plums into 1/4-inch thick slices, cutting around the pit (don’t worry about making slices even).

2. Thread chicken onto long skewers and plums onto shorter skewers. Grill over medium heat for 5 minutes on each side, basting liberally with half the sauce.

3. Place a chicken skewer and a plum skewer on each plate and serve with remaining sauce. Sprinkle with cilantro, if you like.
