Champagne Berry Cake
1 (1- lb.) box Raley's Vanilla Bean Cake Mix
1/2 cup butter melted
1 tsp. almond extract
1 (187-ml.) bottle Korbel Champagne
2 egg whites
1/2 cup Driscoll's blackberries
1/2 Driscoll's raspberries
Powdered sugar (optional)

Prep: 20 minutes Cook: 40 minutes Serves: 8

1. Preheat oven to 350°F and butter a 9-inch round baking pan.
2. Beat cake mix, butter, extract and Champagne together in a large bowl. Beat egg whites until stiff peaks form in a medium bowl, then carefully fold into batter; fold in berries.
3. Pour into prepared pan and bake for 40 minutes or until a toothpick inserted into the center comes out clean. Let cool before transferring to a serving plate. Dust with powdered sugar,
if you like.
