Mango Mojo Shrimp
Mango Mojo Shrimp
1 ripe mango peeled, pitted and diced
1/4 cup orange juice
1/4 cup lime juice
1/4 cup lightly packed fresh cilantro leaves
2 tbsp. olive oil
3/4 tsp. sea salt
3 cloves garlic
1 lb. Wild Texas Gulf Shrimp, peeled and deveined
Snipped fresh cilantro (optional)

Great served over mixed greens for a fresh
summer salad

Prep: 30 minutes Marinate: 30 minutes
Cook: 6 minutes Serves: 4

1. Puree all ingredients except shrimp and cilantro in a blender or food processor. Place half the mixture in a medium bowl.
2. Add shrimp to bowl and marinate for 30 minutes.
3. Remove from marinade and cook on a well-oiled grill over medium heat for 3 minutes on each side or until cooked through.
4. Serve with remaining sauce and sprinkle with cilantro, if you like.
