Sun-Dried Tomato  Meatloaf Burgers
Sun-Dried Tomato Meatloaf Burgers
1 lb. ground beef (preferably lean)
1/2 cup minced red onion
1/2 cup Italian breadcrumbs
1/2 cup shredded smoked mozzarella cheese (in our Deli)
1/3 Traina Sun-Dried Tomato Ketchup, plus additional for drizzling
2 tbsp. Raley's Basil Pesto Sauce
4 Nob Hill Trading Co. Ciabatta Rolls (in our Bakery), split and lightly toasted
2 cups baby arugula
1 tsp. balsamic vinaigrette
4 slices heirloom tomato

Prep: 20 minutes, Cook: 8 minutes, Serves: 4

1. Mix all ingredients except rolls, arugula and tomatoes in a medium bowl. Shape into 4 flat patties.

2. Grill over medium heat for 4 minutes on each side or until burgers are cooked to your liking.

3. Drizzle with additional ketchup and serve on ciabatta rolls topped with dressed arugula and tomato slices.
