Prosciutto Wrapped Zucchini “Dogs”

Prosciutto Wrapped Zucchini
Ingredients
4 medium zucchini
Wooden skewers, soaked in water for at least 2 hours
8 strips prosciutto (in our Deli)
Pepper Sun-Dried Tomato Spread (see separate recipe link below)
Directions

Prep: 15 minutes, Cook: 10 minutes, Serves: 4

1. Trim ends from zucchini and cut in half lengthwise. Thread on a skewer, then wrap each tightly with a strip of prosciutto, pressing lightly to secure.

2. Cook on a well-oiled grill over medium heat for 10 minutes or until prosciutto is crisp and zucchini is slightly soft, turning occasionally.

3. Serve with Pepper Sun-Dried Tomato Spread
