Mini Heirloom BLT's with Smoked Paprika Mayo
Ingredients
12 (1/4-inch thick) rustic French baguette sliced
1 tbsp. olive oil mayonnaise
1/8 tsp. smoked paprika
1/4 cup heirloom tomatoes diced
1/4 cup romaine lettuce
2 tbsp. real bacon pieces
1 tbsp. red onion minced
Directions

Great for a light dinner or serve open faced as an appetizer.
Prep: 10 minutes Serves: 2

Lay 12 (1/4-inch thick) slices rustic French baguette on a board. Stir together 1 tbsp. olive oil mayonnaise and 1/8 tsp. smoked paprika; spread on half the bread slices. Stir together 1/4 cup each: diced heirloom tomatoes and thinly sliced romaine lettuce, 2 tbsp. real bacon pieces and 1 tbsp. minced red onion. Place equal amounts over mayonnaise-topped bread slices and close sandwiches. Recipe may be doubled.
