Honey Nut Glazed Pork Tenderloin
Honey Nut Glazed Pork Tenderloin
4 tbsp. balsamic vinegar divided
3 tbsp. fresh thyme chopped
2 tbsp. extra virgin olive oil
2 tbsp. Nob Hill Trading Co. Whole Grain Mustard
1/4 tsp. pepper
4 cloves garlic minced
2-1/2 lb. pork tenderloin
1/2 cup walnuts very finely chopped
1/3 cup honey warmed
Prep time: 15 minutes
Marinate time: several hours or overnight
Cook time: 35 to 45 minutes

In a large resealable plastic bag, combine 3 tbsp. vinegar, thyme, olive oil, mustard, pepper and garlic. Mix well and add pork. Seal bag and turn several times to coat pork with marinade. Refrigerate for several hours or overnight. Discard marinade and place pork on a grill over medium heat for 30 to 40 minutes or until internal temperature reaches 145°F. Remove from grill and place on a baking sheet. In a small bowl, stir together nuts, honey and remaining 1 tbsp. vinegar; spread over pork. Broil for about 3 to 5 minutes or until hot and bubbly. Cut into 1/4-inch thick slices. Place meat and nut topping on a serving platter.

Makes 6 to 8 servings.
