Harvest Pumpkin Soup
2 tbsp. butter
1 medium onion peeled and chopped
2 stalks celery sliced
2 carrots peeled and sliced
3-1/2 cups vegetable broth
1-1/4 cups canned pumpkin
3/4 cup crème fraîche (in our Deli case)
1 tsp. dried thyme
Salt and freshly ground pepper to taste
Chopped fresh thyme
Prep time: 20 minutes
Cook time: 30 minutes

Melt butter in a large pot. Add onion, celery and carrots;
cook for 5 minutes over medium high heat, stirring often.
Add broth and pumpkin. Bring mixture to a boil; reduce heat
and simmer, covered, for 20 minutes. Let cool slightly then
puree in a blender or food processor. Return to pot and add
crème fraîche and dried thyme. Season to taste with salt and
pepper; cook over low heat until very hot. Sprinkle with
fresh thyme.

Makes 6 servings.
