Chicken with Apple-Walnut Stuffing

Chicken with Apple-Walnut Stuffing
3 tbsp. butter divided
1/2 cup onion chopped
1/2 cup celery sliced
1 medium Granny Smith apple peeled and sliced
8 cups 1 -inch cubes French bread lightly toasted
1/2 cup Raley's walnuts chopped and toasted
1 (14.5- oz.) can chicken broth
1/2 cup apple juice
3 tbsp. pure maple syrup divided
1 tbsp. each: fresh rosemary, thyme and parsley chopped and divided
4 chicken breast fillets boneless, skinless
Salt and pepper to taste
Prep time: 20 minutes
Cook time: 50 minutes

Preheat oven to 350°F and butter an 11-by-7-inch baking
dish. Melt 2 tbsp. butter in a medium skillet. Add onion and
sauté for 5 minutes. Add celery and apple and cook for 5
minutes more. Place bread cubes in a large bowl; add
vegetables, walnuts, broth, juice, 2 tbsp. maple syrup and
half of the herbs. Mix well and place in prepared baking
dish; set aside. Sprinkle chicken with salt, pepper and
remaining herbs. Add remaining butter, maple syrup and
chicken to the skillet; cook chicken for 3 to 4 minutes per
side or until golden brown. Place on top of stuffing and
bake for 30 minutes, ensuring internal temperature of
chicken reaches 165°F.
