Sea salt and pepper freshly ground
3/4 tsp. thyme divided
5 tbsp. melted apricot preserves divided
1 cup chicken stock
1/2 tbsp. butter
1/2 cup Hinode White and Wild Rice

Preheat oven to 350ºF. Rinse hens and pat dry; tie

salt and pepper and sprinkle with 1/2 tsp. thyme.
Place in a shallow baking dish and cook for 1 hour,
basting with 1/4 cup preserves during the last 30
minutes of cooking. Bring stock and butter to a boil in
a small saucepan; add rice, shallots and remaining
thyme. Reduce heat and simmer, covered, for 20
