Fruity Game Hens with White and Wild Rice
Ingredients
2 Cornish game hens
Freshly ground sea salt to taste
Freshly ground pepper to taste
3/4 tsp. thyme, divided
5 tbsp. melted apricot preserves, divided
1 cup chicken stock
1/2 tbsp. butter
1/2 cup Hinode White and Wild Rice
3 tbsp. minced shallots
2 tbsp. chopped pecans, toasted
Directions

Prep: 10 minutes, Cook: 1 hour total, Serves: 2

1. Preheat oven to 350ºF. Rinse hens and pat dry; tie legs together with kitchen string. Season to taste with salt and pepper and sprinkle with 1/2 tsp. thyme. Place in a shallow baking dish and cook for 1 hour, basting with 1/4 cup preserves during the last 30 minutes of cooking.

2. Bring stock and butter to a boil in a small saucepan; add rice, shallots and remaining thyme. Reduce heat and simmer, covered, for 20 minutes.

3. Remove from heat and let stand for 5 minutes. Stir in remaining preserves and sprinkle with pecans. Serve game hens over rice.
