Margarita Chicken
Margarita Chicken
4 boneless, skinless chicken breasts (about 1-1/2 lb.)
3/4 cup margarita mix
6 tbsp. fresh lime juice
6 tbsp. gold tequila
1/4 cup orange liqueur
1/2 tsp. salt
1/4 tsp. pepper
Lime wedges and cilantro for garnish

Place chicken in a resealable bag and add remaining ingredients. Seal and refrigerate for 1 hour. Cook on a well-oiled grill over medium-high heat for about 5 minutes per side or until lightly charred and cooked through. While chicken is cooking, pour marinade into a small saucepan. Cook over medium-high heat until reduced by half and slightly thickened. Serve over chicken and garnish with lime wedges and cilantro. Makes 4 servings. Tip! This chicken is great chilled, too! Serve over romaine lettuce and top with a sprinkle of crushed tortilla chips with a hint of lime.
