Farmers Egg Scramble

Farmers Egg Scramble
4 strips bacon
1 cup refrigerated Simply Potatoes Diced Potatoes with onion
8 eggs
1 tsp. Emeril's Original Essence or seasoned salt
1/2 cup tomatoes chopped
4 tbsp. light sour cream
2 tbsp. walnuts chopped, toasted
Prep time: 10 minutes, Cook time: 15 minutes

Cook bacon in a large skillet until very crisp; remove,
drain and crumble. Wipe most of bacon grease from
skillet. Sauté potatoes in same skillet for 10 minutes
over medium-high heat, stirring frequently, until golden
brown. Beat eggs well with seasoning and pour into
skillet. Cook and stir over medium-low heat until eggs
are set, but still soft. (Do not overcook.) Stir bacon and
tomatoes into eggs. Top each serving with a dollop of
sour cream and a sprinkle of walnuts.

Makes 4 servings.

Substitute Egg Beaters or 2 egg whites for 1 egg to
reduce the fat in this dish.
