Raspberry Chipotle Chicken Salad
Raspberry Chipotle Chicken Salad
1 lb. Coastal Range Organics chicken breasts boneless, skinless
3/4 cup Annie's Naturals Raspberry Vinaigrette
1 to 2 tbsp. chipotle chiles and adobo sauce (from can) finely minced
1 tbsp. lime juice
6 cups organic romaine lettuce washed and torn
2 organic green onions sliced
1 ripe but firm organic avocado peeled, pitted and diced
1 cup Guiltless Gourmet Unsalted Yellow Corn Tortilla Chips broken

Prep time: 15 minutes Marinate time: at least 30 minutes
Cook time: about 10 minutes

Rinse chicken and pat dry. Pierce well with a fork and pound slightly if
very thick. Stir together vinaigrette, chiles and lime juice. Add 1/4 of
mixture to a re-sealable bag with chicken; chill for at least 30 minutes
to marinate. Place remaining mixture in a separate container and
refrigerate until ready to use.

Cook chicken on grill over medium-high heat for about 5 minutes on
each side or until cooked through and lightly charred. Remove from
grill and let cool slightly, then cut into bite-size strips. Place chicken,
lettuce, onions and avocado in a large bowl; drizzle with remaining
dressing and toss well to coat. Sprinkle with chips and serve.

Makes 6 servings.
