Sopapillas
Ingredients
3 cups flour
1 tbsp. sugar
1-1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. butter
1 cup warm milk
Vegetable oil for frying
Powdered sugar for dusting
Directions
Prep time: 10 minutes,
Stand time: 20 minutes,
Cook time: 15 to 20 minutes

Stir together flour, sugar, baking powder and salt in a large bowl. Cut in butter with a pastry blender or two knives until butter is the size of small peas. Add milk and stir until smooth; cover with a towel and let dough stand for 20 minutes. In a large heavy pot, heat 3 inches of oil to 375°F. On a lightly floured board, roll dough to 1/8-inch thick. Cut into 2-inch squares and fry in oil until light golden brown on both sides. Remove with a slotted spoon and let drain on paper towels. While still slightly warm, coat heavily with powdered sugar by shaking several sopapillas in a plastic bag with sugar. Best served warm.

Makes about 40.

Tip! Don't add more than 4 or 5 squares of dough into the oil at a time or it will lower the temperature of the oil and the dough won't puff (pillow) up.
