2 Aidells Cajun Style Andouille Sausages sliced 1/4 -inch thick
1 medium onion chopped
1-3/4 cups hot water
1 tsp. Cajun seasoning
1 (6- oz.) box Chef’s Originals French Quarter Tomato Rice
1 cup green bell pepper chopped
1/2 lb. raw shrimp peeled and deveined
Prep Time: 10 minutes, Cook Time: 25 minutes

Sauté sausage and onion in a large nonstick skillet for 5 minutes over medium-high heat. Stir in water, Cajun seasoning, rice mix and seasoning packet. Bring to a boil; reduce heat and simmer, covered, for 15 minutes. Stir in pepper and shrimp; cover and cook for 5 minutes more or until shrimp is pink and cooked through.

Makes 6 servings.
