Pickled Jalapeno Cheese Straws
Pickled Jalapeño Cheese Straws
1 sheet puff pastry (from a 17.3 oz. box), thawed
3/4 cup shredded Monterey Jack or pepper Jack cheese*
1/4 cup diced pickled jalapeno peppers, patted dry
1/2 tsp. Mexican seasoning blend

Prep: 15 minutes  Cook: 15 to 20 minutes  Serves: 10

1. Preheat oven to 400°F and line 2 baking sheets with parchment paper.

2. Unfold pastry on a lightly floured board and sprinkle remaining ingredients over one half. Fold over to enclose and roll fairly thin with a rolling pin. Fold in half and roll again, adding additional flour as needed. Repeat once more, rolling into a 10 X 10-inch square.
3. Using a sharp knife or pizza cutter, cut into 1/2-inch thick strips. Place on prepared baking sheets and cook for 15 to 20 minutes or until golden brown. Let cool completely, then store in an airtight container. 

*For a little extra flavor, substitute sharp Cheddar for half the cheese.
