Caramelized Onion Dip
Caramelized Onion Dip
2 large onions, chopped
2 large shallots, chopped
2 tbsp. extra virgin olive oil
2 cloves garlic, minced
1 cup plain Greek yogurt
1 cup light sour cream
2 tbsp. minced fresh herbs, plus additional for topping
3/4 tsp. sea salt
cut vegetables (for dipping)
good quality potato chips (for dipping)

Skip the dry onion soup mix packet and go for slow cooked caramelized onions instead. We’re also updating this favorite with some Greek yogurt and fresh herbs!

Prep: 10 minutes  Cook: 30 minutes  Chill: 1 hour  Serves: 8

1. Cook onions and shallots in oil in a large skillet over medium-low heat for 30 minutes or until soft and golden brown, stirring frequently. Stir in garlic.

2. Let cool completely, then stir in remaining ingredients except dippers. Cover and chill for at least 1 hour. Sprinkle with additional herbs, if you like. Serve with fresh vegetables and potato chips for dipping.

Which herbs are best to add to this dip?

We suggest a mixture of rosemary, thyme and Italian parsley. If you're only adding one, go with thyme or rosemary because they have more flavor than parsley. -Celena, Raley's Service Center
