Beer Battered Tilapia
Beer Battered Tilapia
1 lb. tilapia fillets
Flour, for dredging
1-1/2 cups flour
2 tbsp. cornstarch
3/4 tsp. baking soda
1-1/2 tsp. salt
1-1/4 cups ale (such as Boddington's Pub Ale)
3 tbsp. vinegar
Freshly ground pepper to taste
Malt vinegar
Lemon wedges

Prep: 15 minutes, Cook: about 4 minutes, Serves: 4

1. Cut each fish fillet into 4 equal strips and pat dry; dredge well in flour. Heat at least 2 inches of vegetable oil in a large pot over medium-high heat.

2. Stir together flour, cornstarch, baking soda and salt in a medium bowl. Whisk in ale, vinegar and pepper until smooth.

3. Dip fish into batter with a fork, making sure to coat completely. Carefully drop into hot oil, cooking a few at a time. Cook for about 2 minutes on each side or until golden brown. Drain on paper towels and serve immediately with additional malt vinegar or lemon wedges.
