Tequila Marinated Watermelon

Tequila Marinated Watermelon
1/3 cup good quality tequila
1/3 cup lime juice
1 tbsp extra virgin olive oil
1 cup matchstick-size jicama pieces
8 1/4-inch thick small watermelon wedges
2 tbsp. snipped fresh cilantro
1/4 cup crumbled cotija or queso fresco cheese
Badia Pasilla Chili Powder (optional)

Prep: 15 minutes, Marinate: 15 minutes, Serves: 4

1. Place tequila, lime juice and olive oil in a large shallow baking dish. Add jicama and watermelon and let marinate for 15 minutes, turning once or twice to coat.

2. Place on 4 salad plates and sprinkle with cilantro and cheese. Sprinkle lightly with chili powder if you like.
