Harvest Veggie Skillet

Harvest Veggie Skillet
Ingredients
2 tbsp. extra virgin olive oil
2 cups 1/2-inch cubes butternut squash
1 cup coarsely chopped onion
2 cups fresh corn kernels
2 cups diced tomatoes
3 cloves garlic, minced
1/2 cup torn pieces fresh mozzarella cheese
2 tbsp. snipped fresh basil
Directions

Prep: 20 minutes, Cook: 30 minutes, Serves: 4

1. Heat oil in a large skillet. Add squash and cook for 10 minutes over medium-high heat, stirring frequently. Add onion and cook for 10 minutes more or until squash and onion are soft.

2. Stir in corn and cook for 5 minutes. Add tomatoes and garlic and cook until heated through. Top with cheese and basil and cook until cheese is melted.
