Warm Roasted Elderflower Pineapple with Goat Cheese

Warm Roasted Elderflower Pineapple with Goat Cheese
Ingredients
1 cup small pieces fresh pineapple
1/4 cup St-Germain liqueur
1 tbsp. butter
5 oz. log goat cheese (in our Deli)
2 tbsp. chopped walnuts, toasted
Fresh thyme leaves

Directions

Prep: 15 minutes, Bake: 30 to 35 minutes, Serves: 8

1. Toss pineapple, liqueur and butter on a small baking sheet. Roast at 375°F for 30 to 35 minutes or until lightly browned, stirring occasionally.

2. Spoon over goat cheese and sprinkle with walnuts and fresh thyme leaves. Serve with crisped baguette slices.
