Shortcut Polenta Lasagna
Shortcut Polenta Lasagna
Ingredients
1-1/2 cups shredded Italian blend cheese
1/3 cup chopped roasted red peppers
1/3 cup sliced ripe olives
2 tbsp. snipped fresh basil
1 (10- oz.) container refrigerated light Alfredo sauce, divided
1 (24- oz.) tube precooked polenta, cut into 24 slices
Marinara sauce (optional)
Directions

Prep: 15 minutes, Cook: 10 to 12 minutes, Serves: 4 

1. Stir together cheese, peppers, olives and basil in a medium bowl. 

2. Divide 4 tbsp. Alfredo sauce equally amongst 4 large ramekins, then top each ramekin with 2 slices polenta. Divide 3/4 cup cheese equally over the top of the polenta, then top each with 2 more slices polenta. Divide remaining cheese among ramekins, then finish each with 2 more slices polenta.

3. Spoon remaining Alfredo equally over the top of each.

4. Cover with plastic wrap and microwave on HIGH for 10 to 12 minutes or until very hot. Serve each with a spoonful of marinara sauce, if you like.
