Irish Potato Pizza
Irish Potato Pizza
Ingredients
6 strips thick-cut bacon
1 cup thawed and coarsely chopped Alexia Reds (in our Frozen Foods Dept.)
1 Large leek, thinly sliced (white and pale green parts only)
Freshly ground sea salt and pepper to taste
1-1/2 cups shredded Kerrygold Blarney Castle or Dubliner Cheese (in our Deli)
1 Large prepared thin and crispy pizza crust (such as Mama Mary's)
Grated Parmesan cheese
Directions

Prep: 10 minutes, Cook: 20 minutes, Serves: 4 

1. Preheat oven to 450°F. Cook bacon in a large skillet over medium-high heat until browned. Remove and drain on paper towels (drain all but 2 tbsp. fat) and coarsely crumble. 

2. Add potatoes to skillet and cook for 5 minutes, stirring frequently. Add leeks and cook for 5 minutes more. 

3. Spread cheese over pizza crust and top with bacon and vegetables. Cook for 10 minutes or until cheese is melted. Sprinkle with Parmesan cheese, if you like.
