Sweet Potato, Apple and Sausage Hash

Sweet Potato, Apple and Sausage Hash
1 (12- oz.) package chicken apple sausage
1 cup chopped onion
2 tbsp. olive oil, divided
1 tsp. Raley's Alderwood Smoked Sea Salt
1 green apple, peeled, cored and diced
1 (20- oz.) package Alexia Sweet Potato Fries, thawed and cut into 1/2-inch pieces

Prep: 10 minutes, Cook: 20 minutes, Serves: 6

1. Cut sausage into 1/2-inch pieces. Place in a large skillet with onion, 1 tbsp. olive oil, sea salt and apple. Cook over medium heat for 10 minutes or until apples and onions are soft.

2. Meanwhile, thaw potato fries and cut into 1/2-inch pieces. Add to another large skillet with remaining olive oil and cook for 10 minutes, stirring occasionally. Stir into sausage mixture.
