Warm Mushroom Salad

Warm Mushroom Salad
2 tbsp. butter
1 cup 1/2-inch rustic French bread cubes
1/4 cup minced shallots
4 oz. sliced baby bella mushrooms
2 cups spring mix greens
1/3 cup shredded aged Gouda cheese (in our Deli)
1 tsp. olive oil
1 tsp. wine vinegar
1 tsp. stone ground mustard

Prep: 15 minutes, Cook: 5 to 10 minutes, Serves: 2

Melt 2 tbsp. butter in a medium skillet over medium-high heat. Add 1 cup 1/2-inch rustic French bread cubes, 1/4 cup minced shallots and 4 oz. sliced baby bella mushrooms. Cook, stirring frequently, for 5 to 10 minutes or until bread is golden. Toss with 2 cups spring mix greens and 1/3 cup shredded aged Gouda cheese (in our Deli). Whisk together 1 tsp. each: olive oil, wine vinegar and stone ground mustard; drizzle over salad. Recipe may be doubled.
