Maple Squash

Maple Squash
2 tbsp. butter
3 cups cubed butternut squash
1/3 cup apple cider
2 tbsp. pure maple syrup
1 tbsp. lemon juice

Prep: 5 minutes, Cook: 18 minutes, Serves: 4

Melt 2 tbsp. butter in a medium skillet. Add 3 cups cubed butternut squash and cook over medium-high heat for 10 minutes or until nicely browned, stirring frequently. Add 1/3 cup apple cider, 2 tbsp. pure maple syrup and 1 tbsp. lemon juice. Cook for 5 minutes more or until most of the excess liquid has cooked off. Tent with foil and cook until squash is tender.
