Denver Skillet
3 cups Simply Potatoes Diced Potatoes with onion
1 tbsp. oil
2 cups Cook's ham or turkey ham diced
1 cup Raley's Fresh Diced Tri-Peppers
1 small onion chopped
Seasoned salt and pepper to taste
4 eggs
Prep Time: 10 minutes Cook Time: 20 minutes

Cook potatoes in oil in a large skillet over medium-
high heat for 10 minutes. Add ham, tri-peppers
and onion; cook, stirring frequently, for 10
minutes. Season to taste with salt and pepper.
Meanwhile, fry or poach eggs as you like. Divide
potato mixture equally; top each with
1 egg.

Makes 4 servings.
